WAFFLES with Rosti
Freshly baked waffles are the perfect afternoon snack that brings the family together around the dining table. Here you get the recipe for crispy and homemade waffles that, without a doubt, easily become one of the family's favorites.

Approach
- Weigh flour, sugar, vanilla sugar and lemon zest in a 2l Margrethe toast.
- Milk and egg yolks are mixed in a mixer jug and whipped into the flour mixture a little at a time until the flour is completely dissolved without lumps.
- Let the dough rest for 20 min.
- Melt the butter and stir it into the dough.
- Beat the egg whites stiff and add salt along the way.
- Turn the rigidly beaten egg whites into the dough.
- Bake the waffles in a good warm waffle iron with a little fat for the first waffle.

Lasse Gudiksen is part of the Danish national catering team that won gold at the 2020 Olympics in Stuttgart.

300 g flour
30 g sugar
1 tsp. vanilla sugar
1/2 lemon (finely grated zest)
300 g of milk
200 g buttermilk
2 eggs (divided into yolks and whites)
1 pinch of salt
50 g butter
